I took a few hours on Sunday and did a set-piece cooking project I'd been hoping to do for a while: Peach-Mint Pie.

Candying the mint leaves took a while, but the pie filling is stevia-sweetened custard with lots of minced peaches in it, so it's almost healthy as desserts go!

I am only not OK because I didn't sleep last night. I'm heading off to bed now and may well sleep. We can only hope.
